Foodie Friday--Turkey Meatloaf

Welcome to the first installment of Foodie Friday!

(I just made that up.)

Here's one of our family favorites:

Turkey Meatloaf with Feta and Sun-dried Tomatoes  (From Giada)

Mix the goodies first, then add the meat.
We double the recipe for 2 small meatloaves.

(I use regular, not seasoned, sun-dried tomatoes
in oil.) (Also, I reduce the salt since the feta
is so salty!)
As I mentioned, this recipe is a family favorite.  It has a lot of flavor.  For this meal I like to use the best ingredients, mostly from New Seasons.  Using a great feta and a really fresh turkey makes a difference!

We pair this with mashed potatoes and cooked carrots.  We also have gravy on the potatoes.  Most of the time we'll make a 2x batch of the mashed potatoes, and keep half for shepherd's pie later in the week.

Like with the mashed potatoes, we also double this turkey loaf recipe.  The 7 of us eat 1 whole loaf and we dig into the 2nd loaf as well.  However, we restrain ourselves because we know what's coming in a few days…grilled meatloaf sandwiches for lunch!!  Almost better than dinner!!  :o)
