I have a secret trick for my pies....I follow a good recipe! :o). I like Libby's for pumpkin pies. Also, I'm sure it helps that I'm much closer to sea level than you are. But if yours taste good, then that's all that matters! :o)
I just put little cut-outs of leaves made out of crust in the middle of my pumpkin pies because I always test the middle with a knife. But I followed Libby's this year and I didn't have any setting-up issues like in years past (I always try to do a fancy pumpkin pie, like last year was chocolate pumpkin made with melted chocolate ice cream. I stopped trying to be fancy and my pumpkin pie turned out perfecltly! Don't ask about the apple pie though... ).
